Classic Trifle

Ingredients:

For the cake:
1 box of your favourite cake mix
Ingredients needed for the cake mix

For the custard:
1 quart milk
100g sugar
30g cornstarch
3 large egg yolks
1 teaspoon vanilla extract

For the fruit:
1 pint fresh berries (strawberries, raspberries, blueberries)
50g sugar
1 tablespoon lemon juice

For the whipped cream:
1 pint heavy cream
32g powdered sugar
1 teaspoon vanilla extract

 

Method:

Prepare the cake:

  • Bake the cake according to the package directions. Let it cool completely, then crumble it into a large bowl.

Make the custard:

  • In a medium saucepan, whisk together the milk, sugar, and cornstarch.
  • In a separate bowl, whisk together the egg yolks and vanilla extract.
  • Slowly whisk the hot milk mixture into the egg yolks, then return the mixture to the saucepan.
  • Cook over medium heat, stirring constantly, until the custard thickens.
  • Strain the custard into a bowl and let it cool completely.

Prepare the fruit:

  • In a bowl, combine the berries, sugar, and lemon juice. Toss to coat.

Assemble the trifle:

  • In a glass trifle bowl or individual serving glasses, layer the crumbled cake, custard, and fruit.
  • Top with a layer of whipped cream.
  • Repeat the layers until the bowl is full.
  • Refrigerate for at least 2 hours before serving.

Tips:

  • For a more decadent trifle, add a layer of chocolate sauce or caramel sauce between the layers.
  • You can use any type of cake, but sponge cake or pound cake are popular choices.

Yule Log Cake

Ingredients:

For the sponge cake:
4 large eggs, separated
100g granulated sugar
32g all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla extract

For the chocolate buttercream:
225g unsalted butter, softened
400g powdered sugar
30g cocoa powder
235ml milk
1 teaspoon vanilla extract

For the assembly:
Chocolate ganache
Cocoa powder

 

Method:

Make the sponge cake:

  • Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
  • In a large bowl, whisk together egg yolks and sugar until pale and fluffy.
  • In a separate bowl, whisk egg whites until stiff peaks form.
  • Gently fold the egg whites into the yolk mixture, then fold in the flour, baking powder, salt, and vanilla.
  • Pour batter into prepared pan and bake for 15-20 minutes, or until a toothpick inserted into the centre comes out clean.
  • Let cool completely.

Make the chocolate buttercream:

  • In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  • Gradually beat in the cocoa powder, milk, and vanilla extract until smooth.

Assemble the Yule Log:

  • Trim the edges of the cooled sponge cake to create a rectangular shape.
  • Spread a layer of chocolate buttercream on the cake.
  • Roll the cake into a log shape, using parchment paper to help you roll it tightly.
  • Frost the log with the remaining buttercream, creating a bark-like texture with a fork.
  • Drizzle with chocolate ganache and dust with cocoa powder to resemble bark and twigs.

Tips:

  • To make the chocolate ganache, heat heavy cream in a saucepan until simmering. Pour the hot cream over chopped chocolate and let it sit for a few minutes. Stir until smooth.
  • For a more realistic log effect, you can use different shades of brown buttercream and add edible leaves or berries.
  • Get creative with the filling! Try adding raspberry jam or hazelnut spread to the buttercream for extra flavour.

Classic Mince Pie

Ingredients:

For the pastry:
250g plain flour
125g unsalted butter, chilled and cubed
50g icing sugar
1 large egg yolk
1 teaspoon vanilla extract
1-2 tablespoons cold water

For the filling:
350g good-quality mincemeat

 

Method:

Make the pastry:

  • In a food processor, combine the flour, butter, and icing sugar. Pulse until the mixture resembles breadcrumbs.
  • Add the egg yolk and vanilla extract. Pulse until the dough just comes together.
  • Add the cold water, a tablespoon at a time, pulsing until the dough forms a ball.
  • Wrap the dough in cling film and chill for at least 30 minutes.

Roll out the pastry:

  • Preheat your oven to 180°C (160°C fan) / 350°F.
  • Roll out the pastry on a lightly floured surface to a thickness of about 3mm.
  • Cut out circles of pastry using a round cutter, and line a muffin tin with the pastry circles.

Fill the pastry cases:

  • Spoon the mincemeat filling into the pastry cases, filling them about three-quarters full.

Bake:

  • Bake the mince pies in the preheated oven for 20-25 minutes, or until the pastry is golden brown and the filling is bubbling.

Cool and Serve:

  • Let the mince pies cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  • Dust with icing sugar before serving.

Tips:

  • For a richer flavour, use a good quality butter.
  • You can add a pinch of cinnamon or nutmeg to the pastry for extra warmth.
  • For a decorative touch, cut out star shapes from the leftover pastry and place them on top of the mince pies before baking.

Vanilla-Herb Roasted Turkey

Ingredients:

1 (12-14 pound) turkey, thawed
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1/4 teaspoon vanilla extract

For the Herb Butter:
113g unsalted butter, softened
1 tablespoon fresh thyme, chopped
1 tablespoon fresh rosemary, chopped
1 teaspoon vanilla extract

 

Method:

Prepare the Turkey:

  • Remove the giblets from the turkey cavity. Rinse the turkey inside and out and pat dry with paper towels.
  • In a small bowl, combine olive oil, salt, pepper, thyme, rosemary, and vanilla extract. Rub the mixture all over the turkey, both inside and out.

Make the Herb Butter:

  • In a small bowl, cream together the softened butter, thyme, rosemary, and vanilla extract.

Make the Marinade:

  • In a small bowl, combine olive oil, vanilla extract, salt and pepper.

Roast the Turkey:

  • Preheat oven to 325°F (165°C).
  • Loosely stuff the turkey cavity with the herb butter.
  • Place the turkey breast-side up in a roasting pan.
  • Roast the turkey for 3-4 hours, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
  • Baste the turkey every 30 minutes with the pan juices.

Rest and Serve:

  • Let the turkey rest for at least 30 minutes before carving.
  • Carve the turkey and serve with your favourite side dishes.

Vanilla-Glazed Salmon with Roasted Vegetables

Ingredients:

4 salmon fillets (6 oz each)
1 tablespoon olive oil
1 teaspoon vanilla extract
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon honey
1 tablespoon soy sauce
1 teaspoon rice vinegar
1/2 teaspoon grated ginger
1/4 teaspoon red pepper flakes

For the Roasted Vegetables:
1 pound mixed vegetables (broccoli, carrots, Brussels sprouts)
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

 

Method:

Prepare the Salmon:

  • In a small bowl, combine olive oil, vanilla extract, salt, and pepper.
  • Brush the mixture over the salmon fillets.

Roast the Vegetables:

  • Toss the mixed vegetables with olive oil, salt, and pepper.
  • Spread them on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes, or until tender-crisp.

Make the Glaze:

  • In a small saucepan, combine honey, soy sauce, rice vinegar, ginger, and red pepper flakes.
  • Bring to a simmer and cook for 2-3 minutes, or until the sauce thickens.

Cook the Salmon:

  • Grill or broil the salmon fillets for 4-6 minutes per side, or until cooked through.

Serve:

  • Drizzle the glaze over the salmon and serve with the roasted vegetables.
