Vanilla-Chai Biscotti with White Chocolate Drizzle

Ingredients:

250g plain flour
11/2 tsp baking powder
100g golden caster sugar
2 eggs
1 tsp vanilla extract
1 tsp chai spice blend (or mix: cinnamon, cardamom, ginger, clove)
60g blanched almonds
60g white chocolate, melted (for drizzle)

 

Method:

  • Mix flour, baking powder, sugar and chai spice.
  • Whisk eggs with vanilla, then stir into dry mix.
  • Fold in almonds. Shape into a log and bake at 180°C for 25 minutes.
  • Cool, slice and bake slices for 10 mins on each side.
  • Bake at 180°C for 12–15 minutes until golden.

Vanilla, Cardamom & Black Sesame Digestives

Ingredients:

100g wholemeal flour
100g plain flour
1/2 tsp baking powder
1 tsp ground cardamom
1 tbsp black sesame seeds
100g cold unsalted butter, cubed
50g dark brown sugar
2 tbsp milk
1 tsp vanilla extract

 

Method:

  • Combine dry ingredients in a bowl.
  • Rub in butter until it resembles breadcrumbs.
  • Stir in sugar, milk and vanilla until a dough forms.
  • Roll out, cut into circles and prick with a fork.
  • Bake at 180°C for 12–15 minutes until golden.

Vanilla Custard Creams with Toasted Coconut Filling

Ingredients:

Biscuit

125g unsalted butter
75g icing sugar
1 egg yolk
1 tsp vanilla extract
150g plain flour
25g cornflour
Pinch of salt

Filling

100g unsalted butter
100g icing sugar
30g desiccated coconut, toasted
1 tsp vanilla paste

 

Method:

  • Beat butter and sugar, then add egg yolk and vanilla.
  • Mix in flours and salt to form a soft dough.
  • Roll out, cut into rectangles, and bake at 180°C for 10–12 minutes.
  • Beat filling ingredients until smooth and creamy.
  • Sandwich cooled biscuits with filling.

Vanilla Matcha Iced Latte

Ingredients:

1 tsp matcha powder
60ml hot water (around 80°C)
1 tsp honey or maple syrup
1/2 tsp vanilla extract
200ml milk (any type – whole, oat, almond, etc.)
Ice cubes

 

Method:

  • In a small bowl, whisk matcha with hot water until smooth and frothy.
  • Stir in honey (or syrup) and vanilla extract.
  • Fill a tall glass with ice. Pour in milk, then top with the matcha mixture.
  • Stir gently and sip chilled.

Vanilla Earl Grey Tea Cake

Ingredients:

120ml strong brewed Earl Grey tea (cooled)
180g plain flour
11/2 tsp baking powder
100g unsalted butter, softened
120g caster sugar
2 medium eggs
1 tsp vanilla paste
Zest of 1 unwaxed lemon

 

Method:

  • Preheat oven to 170°C (fan 150°C) and line a loaf tin.
  • Cream butter and sugar until light.
  • Beat in eggs one at a time, then stir in vanilla paste and lemon zest.
  • Mix flour and baking powder, then alternate adding dry mix and cooled tea until smooth.
  • Pour into the tin and bake for 40–45 minutes or until a skewer comes out clean.
  • Cool and serve in thick slices.
