Ingredients:
200g bittersweet dark chocolate (70%), chopped
150g unsalted butter
200g light brown sugar
80g caster sugar
3 large eggs, at room temperature
1 tbsp vanilla extract
100g plain flour
30g cocoa powder
1/2 tsp sea salt
For the Garnish:
Fresh raspberries and blueberries
Optional: lightly whipped cream or vanilla crème fraîche
Method:
- Preheat the oven to 170°C (fan)
- Melt the butter and dark chocolate together gently until smooth
- Whisk both sugars into the warm chocolate mixture
- Add the eggs one at a time, beating well after each addition
- Stir in the vanilla extract
- Sift together the flour, cocoa powder and salt
- Fold the dry ingredients into the batter just until combined
- Pour into a well-buttered cast iron skillet
- Bake for 22–25 minutes until the edges are set and the centre remains fudgy
- Rest for 10 minutes before slicing
- Finish with fresh berries and cream or crème fraîche if using
