Ingredients:
200g Plain flour
150g Mature cheddar (finely grated)
120g Unsalted butter (cold)
1/2 tsp Vanilla extract
Fresh rosemary (finely chopped)
1/2 tsp Salt
Black pepper (to taste)
2–3 tbsp Cold water
Method:
- Rub butter into flour until mixture resembles fine breadcrumbs.
- Stir through grated cheese, rosemary, salt, and black pepper.
- Add vanilla extract and cold water, bringing the dough together gently.
- Shape into a disc, wrap, and chill for 30 minutes.
- Roll out thinly for crisp crackers, cut into squares or rectangles, and place on a lined baking tray.
- Bake at 180°C (fan) for 12–15 minutes until golden. Cool completely to intensify the flavour and achieve maximum crunch.
