Ingredients:
200g granulated sugar
20ml water
60ml light corn syrup or liquid glucose
1 tsp vanilla extract
1 tbsp lemon juice
30g powdered gelatine
60ml cold water (for blooming)
Food colouring (red, yellow, green, blue)
200g granulated sugar + 1 tbsp citric acid (for sour coating)
Method:
- Bloom the gelatine by sprinkling it over 60ml cold water and letting it sit for 5 minutes.
- Heat 200g sugar, 120ml water and glucose syrup in a saucepan over medium heat until the sugar dissolves.
- Stir in the bloomed gelatine until melted and smooth.
- Remove from heat and stir in vanilla extract and lemon juice.
- Divide mixture into 4 bowls and tint each with a different colour.
- Line a baking tray with parchment and pour each colour into thin sheets; chill 20–30 minutes until firm but flexible.
- Slice sheets into narrow strips, then press a strip of each colour together to form multi-coloured ribbons.
- Mix 200g sugar with citric acid and toss strips to coat.
- Leave to dry 15–20 minutes, then twist or braid before serving.
