Ingredients:
250g plain flour
150g unsalted butter, softened
100g caster sugar
1 egg yolk
2 tsp Vanilla Mart Extract
Raspberry jam
Icing sugar for dusting
Method:
- Beat butter and sugar until pale.
- Add egg yolk and Vanilla Mart Extract.
- Fold in flour until a dough forms.
- Roll out and cut into matching cookie shapes.
- Cut small windows from half of the cookies.
- Bake at 170°C for 10–12 minutes.
- Cool completely.
- Sandwich together with raspberry jam and dust with icing sugar.
